How is this cost calculated?
The calculation estimates the number of covers lost each week (your weekly covers multiplied by your no-show rate), then values those covers at your restaurant's average ticket. The weekly result is then projected over 52 weeks to get an annual estimate. It's an approximation: it doesn't account for covers you manage to reassign in the dining room, but it gives a reliable order of magnitude for the real impact of no-shows on your business.
